- “Sharbati Wheat” is the most premium type of wheat available in the country. Sharbati wheat is grown in abundance in the Sehore area. There is the black and alluvial fertile soil in the Sehore area which is suitable for the production of Sharbati wheat. Sharbati wheat is also called The Golden Grain because its color is golden, it looks heavy on the palm and its taste is sweet, hence its name is Sharbati. As the name suggests, Sharbati variety wheat is slightly sweeter in test probably due to the presence of slightly more simple sugars like glucose and sucrose than other wheat varieties.

An interesting fact about Sharbati atta is that drought brings out the best quality in this wheat. Being rainwater irrigated, the soil for Sharbati wheat is high in potash content and low in humidity. This amazingly ends up increasing the protein content of the wheat by almost 2% more as compared to the wheat flour. This also leads to the Sharbati wheat crop skipping the requirement for pesticides. Hence the flour from the sharbati wheat crop automatically qualifies as better flour than the rest.
Being a crop from drought-stricken Shehore, Sharbati wheat grains have lesser water content in them. This makes the atta a little dry. Hence making dough from the Sharbati atta requires more water. This in turn makes the chapatis and rotis made from sharbati wheat flour softer and fluffier.
This gehu curbs our carbohydrate intake, organically. Each serving of the Sharbati atta has about 110 calories, with the total carb at 23 g (approximately) and 4 grams of dietary fiber. This leads to a healthy balance with rotis or chapatis being a staple in our diet.

शरबती गेहूं के बारे में एक दिलचस्प तथ्य यह है कि सूखा इस गेहूं में सबसे अच्छी गुणवत्ता लाता है। वर्षा जल सिंचित होने के कारण, शरबती गेहूं के लिए मिट्टी पोटाश की मात्रा में अधिक और नमी में कम है। यह गेहूं के प्रोटीन की तुलना में गेहूं के प्रोटीन की मात्रा को लगभग 2% अधिक बढ़ा देता है। इससे शरबती गेहूं की फसल को कीटनाशकों के इस्तेमाल की आवश्यकता पर भी रोक लगाई जा रही है। इसलिए शरबती गेहूं की फसल का आटा बाकी हिस्सों में बेहतर आटा के रूप में स्वतः ही मिल जाता है।
सूखे से प्रभावित शेहोर की फसल होने के कारण, शरबती गेहूं के दानों में पानी की मात्रा कम होती है। इससे आटा थोड़ा सूखा है। इसलिए शरबती अटा से आटा बनाने के लिए अधिक पानी की आवश्यकता होती है। इससे चपातियों और रोटियों नरम और फुली बनती है।
